Acacia honey is a highly prized, light-colored honey made by bees that primarily pollinate the flowers of the black locust tree (Robinia pseudoacacia). Because of its unique properties, it stands out from other types of honey in several distinct ways: Stays Liquid Longer: Acacia honey contains a higher concentration of natural fructose compared to glucose. This allows it to remain in a silky, liquid state for a very long time and resist crystallization. Mild Flavor Profile: Its flavor is very smooth and neutral. Because it doesn't have an overpowering or heavy taste, it is highly sought after as a natural sweetener for tea, coffee, yogurt, and baked goods.
